Abstract
This article is aimed at studying the history of the emergence of the potato, its global spread, and its impact on human development and land politics. The research analyzes the origins of the potato starting from South America and its process of spreading to Europe and other continents, as well as the impact of this process on agriculture, food security, and economic-political relations.
