Abstract
Maqolada oziq-ovqat mahsulotlaridagi kimyoviy moddalarning eritmada kristallanish jarayoni so’nggi ilmiy adabiyotlar yordamida tahlil qilingan. Jumladan, kristallanish jarayonining fizik mohiyati va kimyoviy yo’l bilan sodir bo’lishi rasm, jadval va fikrlar bilan tasdiqlangan. Kristallanish jarayonining bosqichlari misollar bilan tushuntirilgan.
